Purpose and Scope:
Cereal Chemistry is the premier international archival journal in
grain science. The research presented in
Cereal Chemistry covers the larges food staple in the world and
impacts the quality and nutrition of thousands of food products. No other cereal science journal surpasses it in the quantity and quality of juried, original
grain science research.
Cereal Chemistry explores raw materials, processes, products utilizing corn, wheat, oats, rice, rye,
sorghum, millet, specialty grains, oilseeds, and pulses, as well as analytical procedures, technological tests, nutrition, and fundamental research.
The online version of Cereal Chemistry includes e-Xtra
articles that provide supplemental data tables and additional figures
and photos as well as color versions of illustrations shown in black and
white in the print journals.
Intended Readership:
Food scientists, chemists, biologists, nutrition researchers, and those interested in the cereal and related industries, including product development, quality control, marketing, technical sales, and production management.
